However, if someone prepares it, I would be more than happy to gulp it as it is, without even roti’s. The smoky or charcoal flavour with the combination of Indian spices makes it very interesting. Basically, with this bottle gourd, I have roasted and burnt the fresh raw vegetable with chillies and garlic pierced into it. Ingredients raachi organic spices products
1 lauki / bottle gourd
2 tomato
7 clove garlic
2 tbsp oil
1 tsp cumin
pinch raachi hing powder
1 onion finely chopped
1 tsp ginger garlic paste
½ tsp raachi turmeric
1 tsp raachi chilli powder
1 tsp raachi coriander powder
½ tsp raachi garam masala
½ tsp salt
2 tbsp raachi coriander finely chopped
1 chilli slit
Instructions
firstly, slit the lauki randomly and stuff in 7 cloves garlic. make sure to take small lauki, as it will be easy to burn.
grease the lauki with oil and place it on the burner.
also, place 2 tomato and start to burn on medium flame.
keep flipping and burn on all the sides.
make sure to cook uniformly.
cool completely, and peel the skin.
cut and mash smooth. you can also use a chopper to mash the lauki. keep aside.
in a pan heat, 2 tbsp oil. add 1 tsp raachi cumin, pinch raachi hing powder and splutter the tempering.
add 1 onion, 1 tsp ginger garlic paste and saute until onion softens.
further add ½ tsp raachi turmeric, 1 tsp raachi chilli powder, 1 tsp raachi coriander powder, ½ tsp raachi garam masala and ½ tsp salt.
saute on low flame until the spices turn aromatic.
also, add mashed lauki and tomato.
mix well making sure everything is well combined.
furthermore, add 2 tbsp coriander, 1 chilli and mix well.
