being the colour and texture of it. as a matter of fact, i have expressed my reservations about in my recent lasooni palak recipe. hence i try to explore and post as much as spinach based recipe. continuing the tradition i have come up with a south indian based paneer dish recipe that is paneer hyderabadi recipe. the recipe is very similar to the traditional palak paneer, yet there are subtle hyderabadi twist in it. for instance, it uses ingredients like curd and coriander which makes it unique and gives the required texture and taste. hyderabadi paneer masala anyway, i would like to add some tips, suggestions and variations for a perfect and authentic paneer hyderabadi recipe. firstly, i have used homemade paneer cubes which are moist and juicy in texture. i would recommend using the same fresh paneer if not homemade at least store bought one. secondly, as i mentioned previously you can also add the mint or pudina with the other mentioned leafy vegetables. having said that be careful when adding it and do not overdo it as mint flavour can overpower other veggies. lastly, you can extend the same recipe with other vegetables like potatoes and carrots on top of paneer to make powder 1 tsp raachi coriander powder ¾ tsp salt ½ cup water 12 cubes paneer / cottage cheese ¼ tsp raachi garam masala & raachi palak panner masala 1 tsp raachi kasuri methi crushed Instructions firstly, in a large kadai heat 3 tsp oil and saute 1 onion, 1 tsp ginger garlic paste and 2 chilli. now add ½ tomato and saute until tomato softens. further, add 1 bunch palak, ¾ cup coriander and saute well. saute until the palak shirks completely. cool completely and transfer to the blender. add ½ cup water and blend to smooth paste. in a large kadai heat 2 tbsp oil and saute 1 tsp cumin, 1 bay leaf, 1 inch cinnamon, 2 pods cardamom and 3 cloves. saute until the spices turn aromatic. further, add prepared palak puree and saute well. now add 2 tbsp curd and 2 tbsp cream. saute until the curd and cream are well combined. additionally, add ¼ tsp cumin powder, 1 tsp coriander powder and ¾ tsp salt. saute well. add ½ cup water and adjust consistency as required. further, add 12 cubes Come, let's know how to make it- Ingredients to make Butter & Raachi chicken masala use Chicken- 1 kg chicken 2 tbsp refined oil 1 tsp raachi red chili powder 1 1/2 cups tomato puree 2 tsp coriander seeds 2 raachi ground cinnamon 5 green chilies 4 cloves 500 grams butter 4 red chilies 1 tsp raachi coriander powder 1 1/2 tsp raachi kasoori methi powder 2 bay leaves 2 teaspoons salt 2 medium onions 4 handfuls crushed dry fenugreek leaves for marination 2 tbsp onion paste 1 tsp garlic paste 1/2 cup curd 3 green cardamom 1 tsp ginger paste 1 tsp mace powder 2 black cardamoms 1/2 tsp sugar to decorate 3 tbsp fresh cream 1 handful green coriander Method of making butter chicken- To make this mouth-watering chicken recipe, first prepare the marinade for the chicken. For this, take a big bowl and mix curd, onion paste, green chillies, ginger-garlic paste, sugar, salt, green cardamom, black cardamom and mace powder in it. Add the raw chicken pieces to the bowl and mix well. Let the chicken marinate overnight. After the chicken is well marinated, roast it in a tandoor or oven till it is 3/4th cooked. Now heat some butter in a pan on medium heat. Add bay leaves, cloves, cinnamon, red chillies and crushed coriander leaves. Fry the ingredients for half a minute. Now in the same pan add some onion, red chili powder, coriander powder, kasoori methi powder and tomatoes. Fry them for 5 minutes and once done, puree the mixture by putting it in a blender. Heat remaining butter in a pan. Add the pureed mixture and let it come to a boil. Add marinated chicken pieces, salt, fresh cream and mix well. Add a little water to the mixture to make sure the consistency is not too thick. Now add chopped green chilies, crushed fenugreek leaves and let it boil for a few minutes. Boil it completely. Take out the dish in a serving bowl and garnish with coriander leaves and cream. This butter chicken recipe is easy to make and can be made using simple ingredients available in the kitchen.
